This will be my first Gueuze, I also have a 2014 Loon Oude Gueuze. Are they good to go now or do they need a little more cellar time?

They are good to go now. It's always a good idea to try something fresh before you lay one down in the cellar.

That's my usual M.O. I think I'll drink the De Troch and put another couple of months for the Loon.

It is, but you have to be cool enough to use the term succesfully.

It sounds ridiculous, no matter how cool you are (no offense intended).
Both L's are silent, phonetically it would something like 'canteon'.

But I suppose everyone knows this and I'm just not fun at parties.
