2015 silva stout

    Was lucky enough to snag three last 2 of these at the store today! Should I cellar? Or drink fresh? Thoughts anyone?

    If you look at the bottle, you'll see it was brewed in 2013, then aged in the barrel for a year and a half, so it's already 2 years old. Drink one now, cellar the other.

    I had one fresh and it did not disappoint. I think you're safe drinking one and deciding on the other two from there.

    I just finished a fresh one and it was awesome - drink one and then cellar the other and let those of us who are too impatient to wait know what we missed.

    The whole point of this beer is to blend long-aged beer with bright, fresh beer. Its meant to be drunk now, otherwise the fresh beer won't be fresh. Its a fantastic beer, drink it and enjoy!

    Very alcohol forward when I had it on tap. I'd cellar it and let it age.

    So I read through some of the reviews of this beer, but couldn't quite get a grasp on the intensity of the bourbon. Anyone else have any more info to offer?

    It's very well balanced. A lot thinner than I would have though, but a great vanilla forwardness. I wouldn't say the bourbon is very intense. Nowhere close to BCBS, as a reference. Very easy to drink.

    The bottle I had was pretty great - not heavy bourbon forward or overly alcoholic. Agree with ^^ that it's nowhere close to BCBS in that regard. It's also only 10% vs 14% for BCBS and that difference is noticeable. I had zero thought of "I wish this had some more age on it" while drinking. Bourbon flavor is there, but it's more on the backend imo. The other flavors like chocolate were very subtle, the vanilla was a bit more forward. Hope that helps.

    The two bottles I had were toffee bombs. I thoroughly enjoyed it, just expected more bourbon and roast.

    To me the bourbon is perfectly balanced with the other flavors, not intense. As I drank it, I realized this is a very fine-tuned recipe, meant to be drank now. That's why I'm speaking out against aging it. Aging bourbon barrel stouts seems to be a knee-jerk reaction for some people, and I think it would be a mistake with this beer.

    I agree. There's virtually no heat right now, so letting it mellow wouldn't make much sense.
