2017 Leftover ale-recipe help

    Hello all,

    I just did some inventory over the weekend and I have some extract and a lot of hops leftover from my 5 or so brews from the year. My goal is to brew a beer over the xmas/new years/my birthday break at the end of the month. It's sort of a challenge brew, I want to use as much of what I have left and spend the least amount on new ingredients. I'm thinking a session white ipa with with a touch of honey malt and light caramel just cause I like to make brewed with the mini mash grains I use. I'm currently making up a recipe that I will post later, but any advice would be appreciated.

    Leftovers:

    2 lbs wheat DME

    .45 oz columbus
    .2 oz citra
    .45 sorachi ace
    1.75 oz simco
    1 oz US tetnang

    So after a half an hour of thinking, I've come up with this

    Extracts
    3 lb Dry Malt Extract - Wheat 44.1%
    3 lb Dry Malt Extract - Pilsen 44.1%
    Mini Mash
    0.1 lb Canadian - Honey Malt 1.5%
    0.5 lb American - Pale 6-Row 7.4%
    0.2 lb Flaked Wheat

    0.75 oz Simcoe Pellet 12.7AA Boil 60 min 25.72
    0.2 oz Columbus Pellet 15%AA Boil 15 min 4.02
    0.5 oz Simcoe Pellet 12.7%AA Boil 15 min 8.51
    0.5 oz Tettnanger Pellet 4.5%AA Boil 5 min 1.21
    0.45 oz Sorachi Ace Pellet 11.1%AA Boil 0 min
    0.25 oz Columbus Pellet 15%AA Dry Hop 7 days
    0.5 oz Tettnanger Pellet 4.5%AA Dry Hop 7 days

    I'll use the cheapest dry yeast at my LHBS, probably US-05.

    This recipe will require me buying 1 lb wheat dme, 3 lbs light DME, and some yeast.

    Again, any critique will be helpful, specifically in the hop bill. I'm not sure how all the hops will work together, but then again that's half the fun of homebrewing.

    If you're looking to make a well-incorporated beer, I'd leave out the Tettnang and just use the other 4. If you simply use all of these hops at once, then it'll still be good, just a little disjointed, IMO.

    Myself? I'd push all the kettle additions to 180F and then do a significant dry hop. As it is, you have 2.4 oz. in the boil and a 0.75 oz dry hop. I'd think about increasing that substantially. 3 - 4 times what you have, at least.

    I use it all except for the tettnang. If your trying to clean up the last of everything then use the tettnang at 60.

    I think a little German Tettnanger would be good in a Wheat IPA,
    rather that than Sorachi Ace

    I am with @EvenMoreJesus move it all to late and dry hops, maybe the Tetts for a small bittering charge, and I would get US-04 instead and go for a more NEIPA.

    If you want to stretch what you have you can always do a half batch as there are not enough hops in your leftovers to do a hoppier beer.

    I like the idea of the US-04 for the NEIPA idea. I was also sort of iffy on using the tettnang later in the boil, so i'll boil it closer to 60 min for some extra ibus.

    I'm not necessarily trying to clean all my hops out, I would just rather not buy anything else.

    Here's a new hop bill using some recommendations from you guys:

    0.75 oz Simcoe Pellet 12.7 Boil 60 min
    1 oz Tettnanger Pellet 4.5 Boil 60 min
    0.2 oz Columbus Pellet 15 Boil 5 min
    0.5 oz Simcoe Pellet 12.7 Boil 5 min
    0.45 oz Sorachi Ace Pellet 11.1 Boil 0 min
    0.2 oz Citra Pellet 11 Dry Hop 7 days
    0.25 oz Columbus Pellet 15 Dry Hop 7 days

    IBU= 43

    Be careful not to get too crazy. I did this exact same concept a couple months ago and managed to generate a pretty bad porter. Trashing half an ounce of hops here and there is better than cooking up some sub-par beer. FWIW :slight_smile:

    You don't have enough hops make an NEIPA
    Better try a Belgian yeast then, or else you just end up with an English Ale

    Not trying to bring up an old discussion but
    Step 1. Throw the Sorachi ace in the trash.
    Step 2. Tettnanger 60 rest at 5 should be a nice blonde ale?

    For those who are waiting on the edges of your seat, here is the recipe I went with for a 3.5 gallon recipe

    2 lb Dry Malt Extract - Wheat 35.7%
    3 lb Dry Malt Extract - Pilsen 53.6%
    0.2 lb Canadian - Honey Malt 3.6%
    0.2 lb American - Pale 6-Row 3.6%
    0.2 lb Flaked Wheat 34 2 3.6%
    5.6 lb Total

    Hops

    0.2 oz Simcoe Pellet 12.7 Boil 60 min (added when bringing wort up to boil after mash)
    1 oz Tettnanger Pellet 4.5 Boil 45 min
    0.2 oz Columbus Pellet 15 Boil 5 min
    0.7 oz Simcoe Pellet 12.7 Boil 5 min

    0.45 oz Sorachi Ace Pellet 11.1 Dry Hop 3 days
    0.2 oz Citra Pellet 11 Dry Hop 3 days
    0.25 oz Columbus Pellet 15 Dry Hop 5 days
    1 oz El Dorado Pellet 15.7 Dry Hop 5 days

    Fermenting around 73 F with S-04 ale yeast.
