if only that were true. i've been aging some for awhile precisely because i felt the hops in the recent batch totally clashed with the rest of the beer.

personally, i think "aged" 90minute is terrible, but you never know. fresh 90minute is great. strangely, the (infuriatingly retired!!!!) squall IPA, which is pretty similar to 90min, is as fantastic at 2 weeks old as at 2 years... changes, but is always excellent. Very boozy but it adds complexity like in good vodka.

    I miss Squall.

Why would you think to toss them without trying?!?! NEVER do that.

I have a few Baton's in the cellar. I have had it fresh and at about 10 month's age and I preferred the aged one. I'm not sure how far I'd go with aging but I'm going to find out. I'm guessing 2 years.

Any time you have an IPA that's too boozy or bitter for you, you can try putting it away for 6-12 months and seeing what you think. I accidentally bought some 11 month old Palate Wrecker and it turned into a full bodied, malty honey-bomb. It was pretty darn good. Actually I still have a couple.
