90 minute boil v 60 min

    So I am doing a 90 min boil out of fear of DMS in a pilsner heavy brew. I am have 12 lb pilsner and .5lb aromatic for 5.5 Ga.With 60 min brewers friend says 5.5 SRM

    How much darker will it be? I like my blonds, 18A to be under 7 SRM.

    The difference will be hard to notice.

    For a full boil, pils malt, only a little aromatic, not much darkening.

    Rock and roll with the 90. I go 90 for all of my brews unless I'm going to 120+ for big beers like RIS or barleywine.

    What's the benefit to doing 90 vs 60?

    I like 90 for most stuff..

    Ironically, I only boil my berliners for 15 minutes, and they are just pils/wheat. No DMS that I've found..

    I need to try sometime this "Berliners" stuff, can you recommend some commercial version available in the east cost ?

    DMS risk is greatly exaggerated. Personally, if I brew a pils, I want it as light in color as possible. I do 70 minute boils, but the extra ten minutes is probably a bad habit in all honesty.

    You should be able to get Westbrook in New York I think.. They make a Gose. It's a salty-ish version of a berliner. Try that out. I think it's one of the best around, although not a "real" berliner I guess since it's a Gose. But same idea.

    If you can get Bruery stuff, their Hottenroth is awesome as well.
