Ok. I made two of the exact same dipas one I boiled for 90 one for 60. On the 90 min I moved the hops back 30min thinking it would make it more bitter. However after tasting them the 90min boil is much clearer and more balanced tasting. And the 60 min is more grassy and acid tasting... any ideas why?
need more details, what hops and when and how much? Did you do a full boil for both beers or top off with water? Same yeast? Same fermentation temps? In general, the longer you boil hops, the less flavor you get. It is possible that what you are seeing as "cleaner" is just more of the volatile hops oils being boiled off. I've got nothing for "acid tasting"
A 40 ibu bittering charge at 60 minutes will be about 44 ibu at 90 minutes. This should not produce an obvious difference in terms of bitterness.
i don't think the only difference is the boil time. truth is that most home brewers, because of equipment, skill, efficiency, ingredients, can't produce consistent beer. good maybe, but usually not very consistent. this is one of the biggest differences between pro breweries and home breweries. either that or something else i can't think of. Did you do all grain or extract? If all grain did you get the same efficiency? If extract I would that has a bunch of variable as well. Did you get the same OG, FG, and the same amount of wort in the fermenter? From my personal experience I find it difficult to brew the same beers and hit the exact same numbers. What about yeast? Where they the same age? Did you build a starter the same? As stated above I think it was batch variations.
