A couple of Aging Questions....

    I have a few beers in my collection that I'm not sure when I want to drink and I'd like to wait for a special occasion rather than just drinking them for the hell of it. Can someone help me to decide on how long I can age these beers in my basement (no light under the staircase)?

    DFH 120 Minute IPA
    KBS
    Founders Breakfast Stout
    New Holland Dragon's Milk
    Goose Island Christmas Ale (says you can age up to 5 years on the label)

    The the Breakfast Stouts sooner than later, for sure.

    Most people seem to prefer KBS fresh, but plenty of people enjoy it aged.

    Not sure about the others.

    I would say waking up today is an occassion special enough to enjoy a breakfast stout. I wouldn't age that one personally. 120 you can hold onto for a long time, I like KBS with a year on it and fresh. I don't have experience with the others but I don't think a milk stout would be something you want to hold onto for too long.

    I have 2009 GI X-mas ale, have really enjoyed the two I've enjoyed recently. For some reason there's still a bunch of these bombers around near me. I love KBS fresh and aged. The coffee fades a bit, but it's still a fantastic stout. I dig DFH 120 fresh, but aged it becomes a world class barleywine!

    This sentence makes me so happy that I've got one aging. I'll move it over next to the barleywines :wink:

    Enjoy 120 both fresh and aged, really does age well. As for FBS drink now, I did have two or three that got lost in the fridge and bottled with a year on them are not even close to being as good as fresh.

    When you drink the FBS make sure its out of a coffee mug and alongside some bacon. The bacon is very important!

    If you can afford it, I support aging virtually everything....assuming you have at least had it fresh before.

    Some beers age well, others not so well, and others just change so much that it is tough to say if it is better or worse than the original. It is all about experimentation, that is the fun in cellaring.

    Thank you all for the comments and advice! I now have a plan on what I want to do...

    1. Enjoy FBS ASAP with some bacon (GREAT advice...I wish I could have breakfast now...)
    2. I will probably try to enjoy the DFH 120 pretty soon since I only have one bottle...
    3. Drink one KBS now and save some for over the course of the next year...
    4. I think I will try to cellar the GI Christmas ale and drink it some time in November when it starts to get cold again.
