A Dry Yeast Rehydration Experiment

    This answer really surprised me, as other sources indicate that the temperature of the yeast should not drop more than about 0.1-1.0 degree C per day!

    After thinking about it, it seems like the 1 degree C per hour rate applies to active yeast, while the 1 degree C per day rate applies to yeast that is almost finished fermenting, to prevent it from going dormant.

    Can anyone comment on this? Thanks.
