A few quick notes on beers cellared (07-14)

    These will be quick hits on a few beers I've opened recently as part of inventory reduction. All beers opened in the last 2 months or so.

    2012 Black Tuesday - Honestly better than I remember it ever being. My memory of it from 2012 was a confusing set of flavors that were all over the place with some serious heat. No longer. No reason to rush and open it, but no reason to wait. Great beer. It used to taste like hype, now it's just great. At this point, it reminds me a decent amount of what 2008 Bourbon County Stout tasted like in it's prime. Not identical, but very close.

    100% BBA Cuir - Another fantastic beer that has held up and should do fine for a few more years still. Happy to have a few of these around. Layered and complex with lots of vanilla and caramel but not too sweet as Old Ales can be. This one gives me a lot of hope for Papier and the crew. In fact, I'd rather given up on the Bruery but their beers really seem to age well.

    2 Turtle Doves (not BBA) - Solid Belgian Dark; as advertised. It's not everything it was when it was fresh, but it's still a quality beer. Not something I'd suggest actively seeking, but pretty good.

    2014 Boulevard Rye on Rye - This one just doesn't hold up very long. Rye on Rye just falls apart and loses all character so quickly. I didn't expect the 14 to go so quickly. I suggest drinking it all now before it gets worse. Cook with it maybe. Could make a sweet pulled pork glaze.

    2012 Boulevard Rye on Rye - um, no. A shell of it's former self. Thin and flavorless; it's hard to really describe, but there's nothing left of this beer. Rye on Rye is a good beer to cellar if you want to see what happens to good beer you should drink fresh. Ugh. I have a lot of 2012 left and I don't know what to do with it now. Lesson learned, drink all the Rye on Rye I want when it's fresh.

    2008 Bourbon County Stout - This was my all time favorite beer, but it's well past it's prime. Drinkable, but not what it once was. Drink now.

    2009 Bourbon County Stout - Definitely on the decline and I'd suggest drinking it now. However, it's still very good. I'd say drink ASAP.

    2007 Dogfish Head Worldwide Stout - This was a beer that I never really cared for fresh, and 8 years really helped mellow it out. Plenty of roast and body remaining, with no heat. The licorice I think of with WWS was very mild. I really enjoyed this beer. If you have an 07 around, I would say it's safe to keep aging or drink now.

    Stone 070707 - Original Release. It's still a solid beer. I can't say that it's my favorite beer ever, but considering that I had it 3 years past the planned 121212 drink date, it's done well. It had a feeling of a imperial hefe sort of thing, but with some Saison notes. I never had this one fresh, nor in it's prime. However, I think that somehow this beer has a couple years left in the tank before it just loses it all. Impressive.

    2009 and 2013 Bigfoot - If you're not cellaring Bigfoot, I don't know what's stopping you. It's a great beer that just changes over time. I know people who just prefer fresh Bigfoot, but for the sake of learning about cellaring beer, Bigfoot should be a yearly addition to the cellar. The hop bite drops out between the 09 and the 13 and the 15 in such a distinct and noticeable way that it makes cellaring fun to run verticals. The remaining hop character stays with Bigfoot, but's much rounder after a few years. 13 still bites hard, but the 09 is soft and delicious.

    Good to know on the Rye on Rye since I've been sitting on a 15 for a few months. I guess thats going in the fridge then.

    Agreed with OP's comments on Bigfoot and BCBS.

    Did a 2011-2014 vertical of BCBS this summer and I would say the order was 2012>2014>2013>2011. The 14 and 13 were very close, but the 11 had turned the corner. 2012 was amazing. I'm keeping a couple around and hoping that 2012 doesn't go downhill like the 2011 did by mid-2016.
