A good synonym for "funky"

You have to be careful with what you call it. I have picked up cat piss in wine but never beer. We were tasting a gose the other day and the three of us agreed that it was a pretty good beer, but once I said the "funk" reminded me of dog shit, that was it for one, he couldn't drink it any more. Every time he smelled it that was all he could think of. So not sure you want to bring that up in your tasting notes when describing a beer to someone. "Great beer with a lingering smell of dog shit"

Ha! It seems that way- it's kind of like 'adjuncts', eh? Just because people start making up their own personal interpretation of the word, doesn't mean that it had no specific meaning to start with .

 

Organically pungent? Stank ass?

When friends are getting into wild ales and ask me what 'funky' is like, I tell them you will know it when you taste it. And they do. It's just one of those things like that.

 

Most cultures have a food or drink based on controlled spoilage (my use of fermented in that sense, not the creation of alcohol by yeast). Think stinky tofu, kimchee, sauerkraut. These foods have a smell that can be reminiscent of the funky elements of brett/pedio/lacto brews.

As far as for something possibly recognizable in Mexico, how would you describe huitlacoche? I could see some similarities in the flavor profile there to funky beers.

 

Organic or enteric. The truth is that you're trying to find an appealing way to describing smells & flavors that are, essentially, unappetizing & unsanitary in isolation.

 

For me it's like a combination of musty barnyard and "sharp" like aged cheddar cheese or goat cheese
