Weinhenstephaner Hefeweissbier May be the best beer I've had in a while. Everyone has different tastes. As an enjoyer of wheaty, fruity, bubbly, stuff .. I have to acknowledge this beer as one of the best. Jai Alai from Cigar city was on the top of my list for about 2 years. Around the time I discovered hoppy, flavorful craft beers existed.

We have a few more NC trips this year in hockey, and getting clued in on excellent beer is awesome. Based on your exuberance, I've GOT to try this.

OMB just built a new brewhaus as well, their Copper Alt is also terrific.

Due to NCs strange distribution laws, OMB is pulling back to Charlotte and vicinity, so if your not there you ain't getting it. They were looking to expand into the Triad , but if they did they have to turn over the distribution to a 3d party distro like Tryon or Barringer. They declined of course electing to keep in the quality instead of farming their product out to shit heads. I'll miss them or travel, but good for them. They do make great beers though, you won't be disappointed.

Smithwick's Premium Irish Ale. The combination of roasted barley, crystal/caramel malts, and bittering hops used makes for great color, body, and bitterness without much hop flavor or sweetness. Nicely balanced all the way around and right in the wheelhouse for the Irish Red Ale style.

Oh, and Rochefort 10. And PseudoSue.

I must heartily agree with those who recommended Weihenstaphener Hefeweissbier. It is sublime. May I also put forward Chimay Grande Reserve (Blue Label)? I find it an extremely well defined Strong Dark Belgian.

This was my first thought too. Show me your great pilsner, I'll show you the grain and hop bill - 98% German Weyermann pilsner malt, maybe 2 % Munich or wheat for body and basta. Hop schedule 90 minute or FWH, 10 minute and 0 minute addition. Basta. The key to a good pilsner is how it's fermented and the proper lagering. Same goes for a wheat/hefeweizen... 50% pilsner, 50% wheat... again the key is yeast, fermentation and brewing methods, not the recipe.

    Just my $0.02

Douglas, I am a BIG fan of Weyermann Pilsner malt for my homebrewed beers. Having stated that I am also HUGE fan of other German malted Pilsner malt plus there are numerous Belgian malting companies that make high quality Pilsner malt (e.g., Castle Malting Company).

In the words of a guy I used to work with: "It's all good!"

    Cheers!

Foothills Jade fits the bill. Can't think of any real changes I'd make to it.
I'd also nominate Velvet Merkin and Creature Comforts Reclaimed Rye.

Boulevard Saison-Brett is the first thing that comes to mind. It's just about perfect in my book.

I'm also glad to see all the love for Weihenstephaner. Vitus also comes to mind.
