A Question About Funk

    I see you have tasted Sofie and Matilda. You mention a yeasty flavor in the taste of Matilda and a lemon flavor in the taste of Sofie. This is a great first step in recognizing what you seek to know.

    Funk is a lot of different flavors. There is earthy funk which also sometimes resembles peppery dirt (best I can do), there is lemon limey funk that some brett throws, there is rotten cheese, stinky socks, underarm, horseblanket moldy hay, vegetal, rotted flowers aromas that translate to lesser versions of themselves as flavors in the taste. Hard to believe these flavors taste fine but they do, mixed with a little tart, spritzy carb, and a nice refreshing mouthfeel they can be spectacular.

    It is big money to get the best funk. Try Petrus Aged Pale or Lindemanns Cuvee Rene' for ones that won't bankrupt you. Sofie with age gets a touch of funk. Orval as others mentioned also great choice.
