    De Ranke XXX Bitter. Revisiting the classics is a must. This is insanely drinkable. The minerality is on point. Bitter but balanced and clean. So good.

    All these posts make me so happy. Gonna open a bottle of saison tonight from my very first batch of French Oak Barrel Aged homebrew. So excited for it. Will post a picture up on here.

    Cross-posting from the NE WBAYDN thread. At Proclamation Ale in Warwick, RI for Saison Day and it is glorious. Had a peach saison collab with Tilted Barn to start and now onto Stereo > Mono from their Foeder.

    Finished my walkway today so I'll celebrate with a 2016/2017 Native Wild from Oxbow. The stones are 3"-5" thick which I cut by hand with a chisel and 7" grinder. I wouldn't recommend doing this and I'd never do it again.

    The Native Wild is drinking absolutely lovely. While this has a touch of sour and tartness, it's the funk I'm loving.

    I’ve finished many a project swearing off ever doing it myself again. Luckily, enjoying a beer while admiring your handy work is always at the finish line. It looks incredible and cheers!

    Arizona Wilderness Antiquity: Golden sour blended with an old ale and then aged on Carignan grapes, 9.2% abv. A lot to unpack here. Barely a hiss of carb when I popped the bottle, near still. Funky natural wine, Flanders red/oud bruin vibes, a melange of dried fruit and molasses. Acidity is up front, but the malt character lends a slight sweetness and finally a red wine tannic note. Baking spices, oak and cherry pie. Super unique. I would definitely try more from them.

    Electric Lights On - Strange Design Brewing (Public House)

    Brewed with Barley, Wheat, and Rye. The rye comes clean through. It has a nice spicy flavor and bite (not hot). Lunch with friends, and my first Saison since this thread relaunched.

    Fantome Amer’iGhost: Like most Fantome I had no idea what was in this until I deep dove Google, but goddamn is this delicious. Apparently an Amber saison brewed with black, green and white peppercorns. The carb is phenomenal, light funk, grassy/tea-like bitterness. The malt provides some heft and sweetness but the herbal bitterness and peppercorns come out on top. Brett is there but it’s more fruity and floral, no acidity. Really great mid-week saison.

    Saison De La Senne- Hoppy Saison blended with Cantillon lambic and aged for 3 years in barrels. I could drink this all day, every day. Smells like lambic, but drinks with a soft acidity and balanced saison bitterness. Very well done.

    I am doing a side by side of Wherein Time and Space which was a collaboration brew between Is/Was Brewing and Supermoon Beer Company. It is a hoppy saison brewed with cascade and willamette hops. One version was brewed by the brewers at Is/Was Brewing and bottled there, the other was brewed at Is/Was Brewing and then taken to Supermoon where it was refermented with their house culture and then bottled there. I am also going to open the third version which is the Is/Was Brewing version but bottled with Brett later ...

    First up- the Is/Was Brewing version:

    Pours a cloudy, essentially opaque bright orange color. Thick, frothy, hilly white head forms on the beer, then slowly dissolves leaving ridges and valleys of foam on the beer. The aroma has notes of earthy, woody hops bringing with them some subtle orange and citrus. along with that comes some funky yeast notes, a touch of cracked peppercorn, floral notes and some aged hops.

    Taste follows the nose with the cascade and willamette hops dominating the flavor profile - there are earthy, woody notes with some tangerine and citrus. There is also some pine coming through from the cascade. Along with that comes some floral notes, coriander, black pepper and some light yeasty notes. This is called a hoppy saison - its almost a Belgian pale ale thanks to how hoppy Feel is light to medium bodied. Bright, lively carbonation. Semi-dry finish.

    Overall a lovely hoppy saison.

    Next up is the Supermoon version:

    Pours a cloudy, but not quite opaque golden color. Thick, frothy white foamy head forms on the beer, lingering, and never fully dissipating. The aroma has notes of earthy, herbal hops. For whatever reason I am getting more of the Williamette hops on the nose in this version. There are also clear nots of aged hops, some funky yeast and a touch of peppery notes.

    Taste follows the nose with the hops bringing in dank herbal notes, some catty hops, pine, wood, and some peppery, grassy hop notes giving way to those aged, dried hops coming through on the back end. The finish is dry, woody, and moderately bitter. Feel is light to medium bodied. Smooth, with bright carbonation. Dry finish.

    Overall a very nice hoppy saison.
