A sticky saison situation...

    Hi all,

    Long-time lurker, first-time threader. Need some advice on the batch I have going.

    I have 5-gals of ginger saison, ~7 days in the primary, with a thick layer of goo around the head of the carboy that formed during the initial blow-off. Should I be concerned?

    This is my first saison; past batches of red & brown ales and wheat beers left tall, fluffy krausen, and sometimes a lot of resin & other gunk, but not to this extent. It almost looks like the yeast blew up with the krausen & cultured on the glass. ¯\_(ツ)_/¯

    OG: 1.054
    Yeast: Danstar Belle Saison
    70-75° temp

    It looks like you have a 5-gallon batch fermenting in a 5-gallon carboy, so you were bound to get some blow-off action with minimal head space like that. No damage is done to the beer, but it looks like you may have lost about a quart of it.

    You're fine. You might want to leave yourself more head space next time. By either getting a bigger carboy or bucket, or brew a smaller batch.
