active primary longer than 2 weeks?

    I've been doing a split batch of saison, the one I used Wyeast 3724 on stalled at somepoint before day7. When I checked the gravity on day 7 (and applied more heat), fermentation re-started that night, and it's been going since. So I'm on day 15 of airlock activity. I'm not sure how long the stall was. Should I just wait, or is there a time I should start to get worried like 3 weeks. I guess I could check the gravity, but I didn't want to disturb it unnecessarily.

    Air-lock activity is not a good measure. For instance, raising the temperature of the wort will force Co2 out of suspension, as will changes in pressure. Sometimes if I just look at it funny :wink:

    Only way to be sure is to take a gravity reading, but I'd say if you're not in a hurry just wait another week.

    I agree with you. But, even if it has been slowly consistently coming out over the period of a week it's not a good indicator? I have decreased the temp since then.

    I'm not in a terrible rush, but I would like to get the balls rolling on making another batch soon. Maybe I should just check the gravity.

    Yes. I've been brewing with this yeast all summer. The first beer took about five weeks to finish, and I had the temps in the 90s for most of the fermentation time. The second beer was pitched directly onto the first beer's cake, and finished faster, about 3 weeks. Although finicky, this yeast is so worth it.

    The sample I tasted at day 7 was glorious. So tasty. I'll check it tomorrow. If it's not done, I'll just let it go and I won't be cold crash it when I have other stuff fermenting fermenting in the kegerator. I guess I could force carb it warm.

    Just let it finish on its own time. A month in primary won't hurt anything.

    My last batch of Saison using 3724 took 7+ weeks to finish. It took a looooong time but the beer was very tasty.

    Thanks for everyone's input. It's good to know if my batch isn't done as quick as the others, it is not an anomaly.

    It is not an anomaly for a 3724 fermented beer.
