Actual physical setup for cellar?

    Wondering about your physical setups for storing bottles long term. I have a growing lambic collection and I am wanting to put some of them down for 5+ years to try them as they age. I have access to a cellar which stays dark and is around 60F. Do you all use wine racks for corked beers and just sit capped on a shelf? Just wondering the best way to take care of the beer. Pics of your setups are welcome!

    I've researched the whole lay down / stand up debate and I've come to the conclusion no one knows what's better and both ways work no matter what. With that said I bought baskets that are stackable. Similar to milkcrates.

    Take a look in the thread, "Post your cellar photos" a few down there's 15 pages of folks showing their setups. There's as many variations as there are people, ranging from a cardboard box in the closet to full on, temperature and humidity controlled rooms. If you have access to a room that stays dark and around 60, that is close to ideal. (A few degrees cooler is considered "best ") for cork and cage, I would think side storage would be best, to keep the cork wet, but plenty of others keep them upright for years with no issues. Regular caps should be stored upright.

    I have my 12 beers that I intend to cellar for an indefinite length of time in a 12-bottle styro shipper in my closet. I then have 24 beers in 4-pack holders of various sizes outside the shipper in the same closet that are aging but are positioned from left to right. On the left side are the beers I intend to drink sooner rather than later and progressively put the bottles that I intend to age longer on the right side. Keeps a nice balance where beers I intend to drink fresher get drunk and beers I intend to age stay in the queue. Temperature-wise the closet can definitely get up to the high 70's during the summer but, since I've been aging beers in this fashion going on two years now and I haven't had a badly affected bottle, I'm gonna roll with this until I have reason to switch up my cellar conditions.

    Go out and get 2x4s and a sheet of plywood and build some custom shelves. I have never looked back.
