so long story short the Home brew shop I went to didn’t have any more 2-row so I settled for DME. They also didn’t have 1# bags just 3#. Instead of saving two pounds of DME I tossed in all 9# instead of just 7. Also they didn’t have the yeast I wanted so I got Windsor British 3618 which I didn’t realize is a 65% or so attenuator. That leaves it pretty sweet for me. Can I add just a plan old ale yeast a few days after start of fermentation to help bring it down? Or just say screw it and see what happens. My OG was way too high like 1.085 and 65% gets me to around 1.030 which is pretty sweet. Thanks
Yes you can, but YMMV in terms of how much lower the beer goes (though you should have better luck since it was all DME). Make a starter of a high-attenuator that fits your needs and toss it all it when the starter is at max activity. The yeast need to be at maximum effort so that they slide right into munching on what's left of the sugars. I can't guarantee it will work as I've never tried it, but others here have more experience in this regard and hopefully they will chime in.
Well, now they won't. But I guess you're right. Disclaimer: 6-row is not 3 times as good as 2-row. Sadly, I can't get any more than 10 rows to go through my crusher.

Where in MD are you? It’s a small state and there are some really well stocked actual stores that will have what you want.
My recent old ale (still in the secondary) was fermented with a blend of Windsor and US-05. They were co-pitched. It still finished quite high, in the 1020s. I was aware of Windsor's low attenuation but figured I was repitching, so there was a lot of yeast, and I was augmenting with three packets of (expired) US-05, which I figured would provide any extra oomph needed to attenuate a big beer. Nope. I had always planned on a secondary with Brett c, which is where I am now, but it might be a long wait to get this sg driven down much.
I would pitch a pack of dry lager yeast. 34/70 or S-189. This will get you where you need to go. Good luck.
