I like to brew IPAs with out crystal malts. I mash high for more balance. They usually come out very light in color. What malts could I use to achieve a deeper amber like color? My grain bill is usually Pale Ale Malt, carapils, and munich malt.

Are you looking for color without flavor addition? A touch of CARAFA II or black prinz, using your preferred software for estimated contribution, would add color and no flavor.

I've only tried it once, with modest success, and will try it again in a couple months - but I've heard that you can throw a few ounces of roasted barley in with the sparge to add a little color without picking up roast flavors

I like to add 2 oz roasted barley to a 10 gal batch. Gives a nice color addition

You could replace carapils with melanoidin and use 0,5% - 1 % of roasted malt to get your desired beer color

I admit - I do kind of find it comical that folks who won't use crystal in their IPAs for unwanted flavor contributions are OK with using roasted barley... not that there's anything wrong with that!
