Adding Fruit: Whole? Purée? Concentrate? Extract?

    What is your go-to method to add fruit flavor to your beers?

    If you like concentrates or extracts, what brands do you like?

    I grow my own raspberries and blueberries.

    I boil /mash fresh or frozen fruit then add to secondary for a week or so. Usually add a bit of water so there is no burnt fruit and only boil enough so the whole post is bubbling.

    Also have used dehydrated mangos, passion fruit and. Sugar bananas with some success.

    My best fruit beers and melomels have used Oregon fruit products. I don't have easy access to fresh ripe fruit.

    I like frozen fruit the best. Oregon fruit was mehhhh. I also like a dash of non fermentable sugar to make the fruit pop.

    I normally buy frozen fruit - mango, mixed berries - bathe it in vodka, put it in a food-straining bag and add it to the fermenter.

    What I would advise against doing is using freeze-dried fruit powder. It was impossible to filter out and caused the beers to explode after a few weeks.
