adding honey to secondary

    hey guys, I recently cloned a Martin house day break 4 grain and I added honey to the secondary...after adding the honey, fermentation kickstarted very healthy. Prior to racking to secondary, OG was 1.06. Fermentation is still going, but slowly. What's a decent rule book to go by as to how long to let it sit in the secondary? With more time, comes more of the honey flavor? I know it's all going to be personal preference, I was just hoping for some advice from other's past experiences. Cheers!

    Gravity was 1.060 when you racked to secondary? What was the Original Gravity?

    The answer to how long to leave it in secondary is...at least until all the sugars in the honey have fermented out, i.e. when the gravity has stopped moving. More time will not add more honey flavor.

    Yes, you´ll have to wait until fermentation stops, otherwise you´ll get some bombs, and more time won´t add honey flavor like @VikeMan said, you can let your beer aged bottled or kegged and it´ll be great.

    OG was 1.06 after boil. I didn't check gravity prior to racking. Should have but oh well now I guess. I wasn't too concerned with ABV but how could I ball park measure it now?

    How much honey did you add? And how much wort made it into the fermenter?

    I added approximately 1.5 lbs to a 5.5 gallon batch. Roughly 12.5-13 gallons made it into the
    Fermenter.

    I assume you split the batch and 5.5 gallons is what got the 1.5 lbs of honey. If so...

    5.5 gallons x 60 "Points" per gallon (i.e. 1.060) = 330 total Points before adding Honey
    1.5 lbs honey @ 35 points per pound = 52.5 Points from Honey
    Total Points after adding Honey = 382.5

    382.5 Points divided by 5.5 Gallons = 69.5 Points per gallon

    So your total OG for ABV computation purposes is 1.0695
    (This assumes 35 ppg for your honey, which I think is a reasonable estimate/avg for honey when the actual gravity is unknown)

    I brewed this same beer on Sunday but decided to do something a little different this time. My wife and I were at Cracker Barrel on Sunday morning for breakfast and we had some pancakes...I love the maple syrup that they carry at CB so I decided to buy a 12 oz. bottle of it to add to the secondary. I was planning on adding 12 oz. maple syrup and 1 lb. of honey. Any of you have any takes on this idea? I am certainly opened to any ideas/advice.
