Adding Maple Syrup to an IPA

    I want to add a Maple Syrup to my IPA tomorrow. It's been sitting in the primary for 2 weeks and I want to rack it tomorrow to secondary. My plan is to:

    • Add 1 bottle of Grade A syrup (how should I do this? Dilute? Or just dump it in?)
    • Dry hop with 2 oz. Amarillo

    Does anyone have any thoughts?

    Dogfish 75 Minute does this. You know, in the syrup world, Grade B is actually the higher quality, richer, pricier, more flavorful maple syrup.

    I would treat it like honey. Don't boil it, but maybe heat it up a little bit at 100 F or less, with a bit of water for 10-15 minutes for thinning and sanitizing. I'm not sure of the the proper hold temp/time for sanitation peace of mind, so you'll have to confirm that. Pitch some in the secondary AND bottle prime with it. Be sure the syrup you use is pure, and free of additives that may hinder carbing.

    I recently made a stout with maple syrup and used Grade B in secondary and bottling. I got little to nothing out of secondary, but did acquire a very subtle maple flavor after bottling so I would suggest priming with it only. Also, maple syrup is quite pricy.

    EDIT: Also, dumping maple syrup in secondary will restart fermentation (which is probably why the maple syrup flavor is non existent) and can negatively affect your dry hop.

    I know Grade B is better. I couldn't find it.

    You know what, Drucifer, you make a good point. I'd rather dry hop then use maple syrup in the secondary.

    Treb0r - if I prime with it, how much should I use? 5 gallon batch.

    Sorry, I've never primed with maple syrup. But I know that it is mostly Sucrose. So using a priming calculator, I would imagine a tiny bit more than what they recommend for Sucrose, given the miniscule amount of other unfermentable sugars contained within.

    DFH doesn't add syrup to the secondary. They bottle prime with it.

    Try to find a priming calculator that does syrup. If not, about 1.5 times the amount of the table sugar you are replacing would be about right.

    I never said that DFH adds maple syrup to secondary. I said DFH adds maple syrup to their 75 minute IPA.

    OP asked about adding a whole bottle of Maple Syrup to his secondary, mentioning nothing about bottle priming. You answered "Dogfish 75 Minute does this." What do you think he would take away from that exchange?

    Dude, I'm not sure what your problem is when it comes to only responding to a thread for the purpose of correcting someone, but it's getting really old. It's very patronizing and comes off as snobbish.

    You answer based on the titles and not the actual the question? That's a good way to provide misleading information. If you think I only post to correct people, you are not paying attention. But yes, when someone posts something that's just factually wrong, of course I'm going to correct it. I would hope anyone would do that. I believe posting in any forum carries some responsibilty with it.

    And don't tell me what to do.

    No. I post on the collective sum of information presented to me, e.g. Title AND the Body of the question.

    While being a solid contributor sometimes, you are very much a "corrector". I've seen it in countless other threads.

    I think you care too much. Not everyone picks apart every single detail until the bitter end. I'll stop here, but of course you will continue to derail the post and have the last word. Do you care that you derailed it? Or are you more concerned with proving your silly little point? If you won't let it go, then at least try to get over yourself. Have a beer and relax.
