I currently have maple pumpkin ale in the secondary and I'm trying to figure out how to resolve two issues: 1) The beer has fermented drier than I had hoped, and I need to add some sweetness to the beer without affecting ABV. 2) The maple flavour is not as pronounced as I had hoped so I need to increase it somehow. Any advice from the brew veterans out there would be awesome! Cheers Russ
1 - do you keg? if so you might be able to add xylitol or erythritol - both are unfermentable sugars that actually taste and are as sweet as sugar, cannot use them to bottle though as they will cause yeast lysis and terrible rotten flavors, another route would be to campden, add K-sorbate and regular old sugar (again only for kegging) 2 - maple flavor, you can add a maple extract or some ground fenugreek seeds
