Adding water during boil

    I am an extract brewer with steeping grains.

    Is there anything wrong with doing this below?

    · "During boil, I slowly added cups of water to increase boil size, as I became less worried about a boil-over. This almost got my boil to 4 gallons by the time it was over."


    I figure It's better to add a gallon of water to boil and then top off with another gallon than to top off with 2 full gallons of unboiled water...

    There's nothing wrong with it, except that hop utilization will be a crapshoot. You wouldn't be able to precict it with the boil size constantly changing, at least with any of the available calculators.

    I haven't heard of this process, but I don't see how it could hurt. I suppose one reason it won't boil over is you are constantly watching it.
