aeration & yeast

    Hello all,

    I have read (smewhere?) that one ought to aerate wort and *then* pitch yeast, never the other way around. Can anyone tell me why this is the case?

    Either way is fine. As long as you don’t wait too long to aerate. Oxygen is the enemy after fermentation takes off.

    My process is like this:
    1. Pour yeast into fermentation vessel.
    2. Drain cooled wort (with a fair bit of splashing) into said fermentation vessel on top of yeast.
    3. Inject pure O2 to wort (sometimes I skip this for low gravity ales) and let it ferment.

    I find that I usually get active fermentation sooner by pitching yeast first than add wort and aerate.

    my method is to add yeast to the cooled wort as it is falling into the fermentor bucket.
    never have added O2 other than that.
