After Fermentation

    After fermentation has ended, is it ok to let it sit in the fermenter for an extra week before moving it to the bottling bucket and bottling?

    Absolutely ok. 1 week or even longer is fine. Waiting is generally a good thing in homebrewing. Rushing things can be _bad_!

    As long as your temps are stable and the fermenter isn't disturbed you can actually leave it in there for quite a while. I was listening to the Experimental Brew podcast and they mentioned leaving beer in their fermenter for several months with no issue.

    The yeast still has a lot of "cleaning up" to do after fermentation, so the extra week on the yeast is almost a necessity if you want your beers to turn out better.
