Aged DIPA

    An old DIPA. Doesn't "turn" into anything. The hops die down, and the malt shines a bit more...

    It stays a DIPA but the flavor profile changes in some interesting ways depending on the age until it eventually starts to taste stale (sometimes a bit like cardboard).

    Over the past year ive tried several DIPA that were 1, 2 yrs old. They taste really nothing like the same beer fresh and nothing like any other style. They seem to be more funky, fruity and sweet. Has anybody else tried any thing like that?

    Yeah, I once bought a case of DFH 90 min that was about 5 days old after bottleing and deliberately spread drinking the bottles out over 9-10 months. No funky flavors but loss of bitterness as the malt emerged and the beer started to taste more like reaonably sweet sherry.

    120 minute turns into candy when it's aged.

    Im having a Deviant Dales that was canned 10/13/2013 and it is awesome! Ive had severl others over the past year or so that were that old or older and they all have the same flavor profile. Nothing like an IPA, more like a sweet, smooth malty taste but cant compair it to any other style.

    A barleywine and depending on the beer, is actually better than fresh. Devil Dancer comes to mind.

    A barley wine and a DIPA have recipes so similar I've heard arguments that they are the same beer-one meant to be drank fresh and one that ages nicely.

    Straight from the tap, Devil Dancer is incredible. I haven't had a bottle that did it justice. Maybe I should sit on one.

    Never had it on tap but yeah, I'd sit on a bottle and check it in a year or two.
