'Aged' hoppy beers

    Idk if anyone has been able to hold on to their hopslams, but after 6 months-1year, it might just be my favorite aged ipa. I have been experimenting a lot with IPAs, and there are some that really shine. Aged hopslam really showcases that honey!

    Hoptimum holds up very well in my opinion. I almost dont consider it a DIPA, but more like a hoppy pale barleywine. Drinking one with about ~7 months on it and the malt really shines through with nice breadiness and caramel notes. Also, sierra nevada has a signature yeast strain that I think brings out wonderful flavors. The hops take a backseat and really just add some balance and subtle piney/citrus notes as well. These really big imperial IPAs hold up very well, nothing wrong with a little age.
