Aging Anna?

    How do people feel about aging 750s of Hill Farmstead Anna? I kept a bottle for about 15months and when I opened it, I thought it lacked some complexity that a) it had fresh and b) other saisons gain with age. It's entirely possible I caught it at a bad time but I was curious what other people thought about laying bottles of Anna down for 5 years or so.

    I had one aged for 2 years and it was phenomenal.

    It gets too tart even after 6 months, and after a year or so, the tartness tends to drown out the other flavors. I've found 3-4 months to really be the sweet spot for HF tart saisons. 4 month old Vera Mae is sublime.

    I just had a fresh one. With the sweetness offered from the honey, I feel like a little additional tartness wouldn't hurt. Although, there was a nice balance already.

    I'm definitely going to age one or two.
