Aging beer in an apartment?

    I've been into craft for about a year or so, and I usually try to drink as fresh as possible, but tonight I got to indulge in a glass of aged Stone IRS 2011 release, and it mellowed out so much after 3 years in a cellar and it was absolutely delightful. After this experience, I'd really like to get into cellaring brews. Now, my issue here is the fact that I live in a small one-bedroom apartment and my complex doesn't allow access to the cellar, obviously.

    My buddy recommended renting a very small storage unit/garage to store cases in, but I feel as though that'd be overkill. Does anyone have any experience in aging beers while living the apartment life? Is it plausible to age beer in a mini-fridge or something of the sort, even though storing a large amount of bottles would require storing some on their side? Sorry if this is a dumb question, but I just figured that some suggestions couldn't hurt.

    Lived in an apartment for a year. Had my "cellar" in the closet. You're fine.

    I also live in a small apartment. This one time I aged a BCBCS in the kitchen cupboard for 3 days. Then I drank it. That's as good as I got

    I'm in the same situation. I've looked into this. Apparently, a fridge with temperature control works well. Controlling humidity is the tricky part.

    That was one of my ideas, but I figured a fridge/cooler with all of these fancy controls would probably run me a small fortune.

    you could try buying a mini-fridge. I would get one that has a thermostat. you can control the temperature and get it very close to cellar temperatures. I do recommend one that has the freezer part as a separate area from the refrigerator because it's hard to keep the freezer part from melting at the higher temperatures and dripping water. In other words, it's a 2 door fridge.

    I live in a southern CA tract home, no cellar, but an upstairs bathroom that is not used works great for a cellar. I cellar my beers under the sink, it's dark, stays relatively cool, when I pull a beer out of my 'cellar' I just refrigerate it for a day or two and enjoy. Some beers I have cellared this way include Narwhal, Parabola, Velvet Merkin, Bigfoot, Fyodor's Classic, Anderson Valley Huge Arker, Sucaba, Old Ruffian, Old Stock Ale. The beers in my 'cellar' have never obtained an off flavor, always been great some have cellared for two years. Just find a cool, dark place to cellar. Cheers!

    mini fridge with temp controller. keep at 55 ish. the temp controllers are like $50-60 ish. if you have nice lambics or big, malty beers suitable for long term aging, it's worth it to keep them at optimal temperature.

    I also live in a one bedroom apartment and you actually have a few options that should work just fine. For maybe a year or so I aged beer in my coat closet because it was in the middle of the apartment and I figured the temperature wouldn't fluctuate as much there and of course it was dark. I ended up purchasing a mini fridge that has temperature control so I use that, but I'm also lucky that my fiance's parents house is only a 15 minute drive and they have a really nice bar in the basement so I store 90% of my aging beer in the basement now under the bar sink.

    As long as you store your beer in a dark area and TRY to keep temperatures as level as possible you shouldn't have to worry. All the beer I stored in the apartment has been fine and I've never experienced off flavors or anything like that.

    P.S. New Agollach record is kickass.

    Me and my buddy just put our beers in wine and beer boxes and keep 'em out of the light. The temperature of the room that the boxes are in fluctuates a little with the weather. But, if the year-old Lil B I had the other night is any indication, the temperature is not a huge deal. I'd say as long as it's not very hot for extended periods of time, you're probably fine.

    Bought a "wine" fridge...took the racks out and made custom racks so the bottles stand up and don't lay down. Holds Keep it 53 degrees. I actually have it next to my bed (the girlfriend LOVES that ::sarcasm::slight_smile:. All in all holds 12-16 bottles depending on size. New air system on overstock costs me about $250 all said and done. A price well worth it.

    I've got mine in my living room behind the couch. No windows in the room so sunlight isnt an issue. Its somewhat near the AC unit, but so is everything with an apartment my size. Some normal overhead light hits the beers though. Is this a problem worth correcting somehow with a blanket or something?
