Aging Beers without cellar or refrigerator

    I have a decent collection of BA stouts, barleywines and sours going that I have been aging for about a year now. I live in SoCal and most houses do not have basements (like mine). I also do not have a dedicated refrigerator for the beer.

    I am currently "cellaring" them at room temperature, in a hutch out of direct sunlight. The thermostat in the house is usually set to around 75-78 degrees.

    What's the opinion of the Beeradvocate world on aging at room temp? Ready go....

    The only thing that doesn't mention that I would add is that a consistent temp is preferred. Shuttling beer from the fridge to a self and back several times (which can happen when you think you might open a bottle, but then don't), can do undesirable things to a beer. I have not had problems storing beer at basically room temp (65-70 degrees), as long as it's consistent and out of the light.
