Aging Beers

    So I understand the 'how to' of aging beers as far as the conditions needed but I really don't know much more than that. For example, what beers are worth aging and how long to age them for?

    I have read articles/forums on this but there doesn't always seem to be a consensus on which beers need it and how long is good. I have heard some people say age KBS for at least a year and then you hear, no no no, that is better when it is consumed fresh.

    I have a few bottles of Barrel Aged Beers that weren't cheap and I would like to drink them at their peak just don't know when that is? A few of the beers I am talking about are:

    2013 Black Tuesday
    2014 (I assume) Fyodor's Classic
    2014 Sucre
    2014 Parabola
    2013 Parabola
    2014 Vietnamese Speedway

    Any advice would be appreciated. Sorry if I am missing something on this.

    My advice, if you have never had the beer before, drink it right away.

    My opinion is that aging should be done as a personal preference. If you try a beer and feel it might be better after sitting for while, let your remaining bottles sit. It took me a couple of years to get a feel for what I wanted to cellar. And once you start building a small collection it gets easier to add more to it without drinking what you already have. I like the practice of trying a beer at least once before trying to age it. You have to know what it tastes like fresh in order to appreciate what the aging process does for each beer.

    The reason you haven't found a consensus on what beers to age is because there is almost no universal consensus on what beers to age. (There are even people on here who prefer Bigfoot fresh!)

    You should definitely take that Vietnamese Speedway though and trade it to me (or drink it fresh to appreciate the coffee) ;-)
