I haven't heard many opinions on this yet, so I figured I'd ask you fine folk.

I picked up some of Bellwoods Intermodal on release day a few weeks ago and want to age one.
Now as a lambic style beer, do you think it would hold the same scrutiny in the cellar as other lambic?

5 years tends to be my personal cut off for aging anything, (but I'm primarily a stout drinker) so I don't see myself getting anywhere close to the best before 20 years mark I see on bottles of 3F and Cantillion.

I'm aware there is no real way of knowing until you drink it aged, but given the chance, would you let it age?

Yes, it would have all of the same qualities as a Lambic-style, if that's what they are calling it, so the yeast and bacteria would keep it, in theory, slowly changing. And it's also corked (I think?) so there would be some micro-oxidization and whatnot.

I'm sitting on a magnum. Will probably open it for my birthday next year. Will update with how it is going.

Has anyone opened one lately? I still have a magnum and a couple 750s hanging around.
