Aging Brewery Viviant Escoffier

    So I got some BV Escoffier today and it said it has live yeast in it and it can be aged up to 5 years. Dont know if any of you have had it but its not really that sour. Im betting it will get more as it ages though.

    My question is, Im assuming the yeast their talking about is the brett, from what Im reading Brett works best between 70 and 80 degrees or so. So is this a beer I wouldn't have to keep at cellar temp and I could just stash it away in a closet for a while? I don't have a beer chiller or fridge so my aging options are limited to the fridge, which will basically stop everything or the closet...which is usually too warm for most beers to age. Even though were heading into fall and winter and I keep the house cooler.

    I am also curious about this one. Picked up a 4pk myself and am really curious how this one would do over time
