Aging DFH 120

    So I am the proud owner of 2 DFH 120 Minute IPA's, one each of the 2011 and 2012. How long does anyone suggest aging them?

    I know it says "ages well" on the bottle, but I also know that many people enjoy them best after a year or two. If you have experience with aging 120, speak up.

    I enjoyed the 2006 vintage with 4 years on it and it's outstanding, that said it was still sweet enough to last longer. I have half case of was and probably 6 bottles of 120 and I am planning to age them all for at least 4 years before trying them. My goal is to make it to 10 years on all of them, we'll see if that happens.

    Alright, well, I'm not sure I can keep my hands off of them for that long, but I'll give 'em both some time.

    I heard from people at the brewery a while back up to 50 years. I am a bit skeptical of that to be honest but I have had 5+ year old bottles that were not even close to being over the hill. 50 might be a stretch but could see a bottle continuing to develop in the bottle in a positive way for a decade or two.

    I have an '06 that I am thinking about cracking soon, I will get back to you with the results. I've had very fresh 120min on tap before so it will be interesting to compare

    Mine are around a year old now. Had one from the last bottle date, and it was good, but took me forever to drink it.

    Any prime conditions to keep it to get the best aging?

    The thing about this beer (and American beers in general) is that there is no real history with aging them. If I am not mistaken DFH started brewing 120 in the early 2000's. I know the earliest have seen was the corked and caged 120 bottling but I think I may have tried it on tap earlier than that. How this beer will age long term is anyone's guess. They just haven't been brewing it long enough. It's not like some of the Belgian stuff (lambic quads ect) which have been brewed and cellared for many many years so you have a general idea of what you are dealing with.

    I have a few of my buddy thepeter's 120 bottles sitting in my cellar (2004 I believe) that he gave me to "hold" before he moved to London a few years back. We plan on drinking them together when they reach the 25+ year mark. How will it taste? God only knows. But is a fun experiment right?
