Aging Double/Imperial IPAs

    What're everyone's thoughts on this? Right now, I'm asking specifically in regards to the Founders Doom I just snagged (it is Barrel-Aged after all).. I could easily google this but wanted to know the opinion of my fellow BAs!

    I like Furious and Abrasive with some time on them. Those are the only IPAs I've put some time on, but like em more after they sit for a while.

    I say throw one in the cellar and the next time you get a fresh one do a vertical, cheers!

    I was wondering this same question as I am getting a bottle of doom next week. On one hand you want to have IPA's as fresh as possible and then on the other hand you want barrel aged products to have a little age on them to lower the alcohol bite (at least in my case). Good question and I am curious to see more answers

    I doubt there will be a vertical, as the Backstage Series has historically been one and done...

    There isn't the typical "heat" you would expect in a "bourbon barrel aged" beer, much smoother than even the Backwoods Bastard... But I have had one and am keeping one for a while just to see the difference myself!

    To be honest, some IIPAs have done quite well aging, and the Double Trouble I am finishing from last year (new release 5/1!!!) is still quite enjoyable. And that is the parent beer for Doom, so I am hopeful it will age well. I have also liked the Weyerbacher Double Simcoe with some age, and the Hoptimum.... But HopSlam did not fare well in the cellar. Still drinkable, but way better fresh....

    I'm definitely going to cellar a bottle of Doom as well. I say for any hoppy beer the hops will most certainly fade a bit, but the bigger and deeper the malt base, the better it should do.
