Aging Farmhouse ales/Saisons??

    Has anyone had any experience aging farmhouse ales or Saisons? Does the funk become stronger with age? I have a few things in the cellar already, Jester king Black Metal, Tank 7, Terrapin Maggies Peach Farmhouse are just a few that come to mind. Any insight would be appreciated

    I can only speak to HF Anna, Arthur, and Clara, but I vastly prefer them with at least 8 months or so on them. Considerably more funky than when fresh. I haven't been able to keep any around much longer than that.

    My only real experience is with HF saisons and Fantome. HF seem to get much more funky, tart, sour, ect when aged, and I certainly enjoy them more. Same with Fantome for the most part.

    Just to add on, it does matter how they are brewed though. For instance, Tank 7 isn't going to get any better since it is a Saccharomyces-only beer, but something like Saison-brett will change (sometimes for the better) as it ages.

    Most of these have neither brett nor bugs, so they will age just like most other dry blonde beers with alcohol contents ranging from 4 to 8 percent alcohol. That is, they probably won't age very well.

    drink the tank 7 now, the hops will fade quickly and, well, that's kinda the thing that makes 7 so good, it's pretty hoppy.

    Without "funzies" in them, they really don't hold up very well. I remember grabbing an Avery 16 about 3-4 months back and it really had turned very bland and was basically a complete waste.
