I was wondering if you all think this will age. Those who have had it recently, is the fruit becoming more mellow and tied into the bourbon? Or is the fruit aging bad?
I think it's perfect right now. The fruit is mellowing fast, but that's good because it was WAY to forward fresh. I'm not sure how long it will last overall though, but I still think 2010 BCBCS is aging well, so you never know.
I'm going to guess about 1 year will be the sweet spot. I had one about a month ago and it still tasted too fruit forward. Any more than a year though and I think you'll loose too much of the fruit.
