Aging Gueuze and flavor changes.

    Is there a general change in flavor profile most gueuze's go through as they age? I just obtained several bottles of Boon 2009 Mariage Parfait and was wondering how the flavor might change if I cellar them.

    Yes, lots of variables. Some get more funky, some more dry, some more sour, some taste like a musty basement, some Sharp and acidic, etc.... The boon mp I had was super funky.
