Aging Hardywood GBS/BBAGBS

    Anyone have experience aging GBS and/or BBAGBS? I've got an extra of each and I'm not sure if aging would benefit the beer or if all the good spices will fall off. Hoping I'll get my hands on the RBA variant this weekend. Cheers!

    I've had GBS 3 weeks old and 3 months old.... huge difference. 3 week old GBS was fantastic. 3 month old wasn't a bad beer, but gingerbread flavor fell way off.

    That's a shame. How does it age in barrels without the ginger falling off?

    A good question. Only two samples to compare (6 oz pour from the bottles each time). Safe to say everyone that drank it fresh with me thought it was great.

    Drank a crowler that was alittle over a month old and I loved it, drank a bottle last night and I thought the crowler tasted way better.

    But as far as aging it I wouldnt, Id drink it now/soon and enjoy those gingerbread flavors

    I thought I'd fire this thread back up, as I have some 2015 GBS, Christmas Morning, and variants. Has anyone saved any of these from last year and opened them recently? I particular, I'm wondering if short-term cellaring would benefit BA GBS or Kentucky Christmas Morning.

    I had some 2014 GBS next to 2015 this past Xmas. 2014 was a borderline drain pour.
