Aging hardywood gingerbread stout?

    Sorry if this has been asked didn't see anything.

    Was just curious is this something you can cellar? I got two bottles was wondering if drinking one and saving one a good idea.

    I'm wondering the same thing but I'm skeptical about aging it because I'm afraid the ginger may fall off too much. Hopefully someone who has actually aged one will chime in with their thoughts.

    If I can get more I might have to take one for the team and wait a year. I was thinking the same thing about the ginger.

    Last years batch (the first batch made), was thicker and aged gracefully. Actually tasted better when I had it in July then when fresh last december (ginger was too much at that time). There are people in Richmond still holding onto bottles from that batch, whihch I imagine are still tasting great. This year's version is thinner, and is tasting perfect right now. Personally, I don't think this year's version is going to get any better, but since I have great access to the beer and drink it on tap regularly, I may lay one down to see how it turns out. Because of the difference from last years version to this version, I can't really give you a definitive yes or no on how it will age, only that I believe it may be best to enjoy the beer now. Hope this helps!

    I have a 9-2012 that I acquired in a trade which I was saving to enjoy with some friends in a couple weeks. Anyone open that year recently and can tell me how it held up over the year? Unfortunately I've never tried it fresh, but wanted to share this one thus I have to wait a couple more weeks. Thanks.
