Aging Highland Cold Mountain

    I have a couple questions about aging, as I have just really got into this trend.

    1. I purchased a bomber of Highland Cold Mountain about 3 months ago and have had in it in my fridge ever since. Considering the fact that it has remained cold since I purchased it, can I take it out and still age it?

    2. If the answer to the first question is "yes", then whats the best place to put it while it's aging? I don't really have a cellar or anything special, and I assume remaining in the fridge is too cold, so, where should I put it for the aging process?

    Please give your opinions on this beer specifically, especially if you have aged it before. Thanks in advance for any help or advice that you may be able to give/offer.

    well, i've heard before that this beer ages very well. I just wasnt sure how to go about at this point, especially not having a cellar or something to age it in.

    Personally I wouldn't age a 5.2%ABV winter seasonal, at this point I would drink it or drain it and chalk up the $6 bomber cost. If you are dead set on aging it I would leave in the fridge until its released again and do a side by side tasting to confirm the hearsay that this beer ages well. I would also recommend reading an article about what beers are prime candidates for cellaring.

    I've aged cm for years now. I did a 4 yr vertical last year and the oldest was BY FAR the best. If you can find.d a brown label cm, it is truly heavenly and how cm should taste.

    I disagree. I held onto a 1L swingtop from 2010 and had it about three months ago. It was not pleasant. The entire spice profile was gone and the beer itself was heavily oxidized. Bought new and cellared in my basement the whole time.

    Had a 1y/o cold mountain, drain pour. Had a weird cough syrup fruitiness to it.

    I had a one year old and found it to be a slight improvement on a fresh bottle. I plan on aging another bottle for two years and...we'll see.

    Vertical comparison of the Cold Mountain wouldn't really be worthwhile unless you want to compare the different spices. They change the spice mix each year, so the beer will taste different automatically. With that said, if anyone is holding onto some 2012 CM, please let me know! That was by-far my favorite version!
