I know people tend to use those johnson controls for temp regulation on fridges that they use for cellaring, but a lot of beers on this site say 40-50 degree temps. Doesn't a normal fridge get into that range at max temp setting?

Perhaps, but you don't get the control over temp variations that you do with an external controller. You also don't have protection in case the fridge skitzes out and tries to freeze your beer. My controller won't let the fridge get too cold even if it tries and if my controller's sensor goes bad, it shuts everything down saving my beer.

Alright. Guess I will get one. Is the Johnson controls one the best?

Instead of a temp controller buy a digital thermometer. I bought one on amazon. It's a digital thermometer that asle reads humidity. It's made for a cigar humador. All you do it pop in a battery and it attaches to the inside of your fridge with a magnet. I can set my fridge using the regular temp controls and the warmest it keeps is around 54. I prefer to cellar at 48 degrees because that is where I like to drink my sours. The thermometer confirms that my fridge only fluctuates by a couple tenths of a degree once I set it where I want.

Costs less than $20 and installs in 2 secs.

How is the humidity in your fridge?

Still gonna need a temp controller too. My fridge on lowest setting is about 40 degrees as best. Don't want it quite that cold in there.

Also curious about regular fridges and humidity levels

I haven't gotten my control yet, but my fridge on the lowest setting is reading about 40 temp/40 humidity, which I think its good for the humidity. Too cold for my liking though.
