Aging KBS in a kitchen fridge

    Does anyone have any recommendations for aging KBS. I have one left and was thinking of keeping it in my normal refrigerator where the temp is 38. My thinking is that it will slow the aging process and keep it pretty close to how it tastes when fresh. Any suggestions? Is this a good idea or should it just be kept in my basement where it's about 58

    You're correct that keeping it colder will help it stay longer. Ask yourself what you'll do if you electricity goes out for a few days and act accordingly.

    What do you mean about the electricity going out? It's a big beer and would be more than ok warming up and cooling down over a few days.

    Well knock on wood, the power hasn't gone out for more than a half hour since I've lived in this house. Having said that, if there is some natural disaster that Knicks my power out for a few days I would have bigger fish to fry haha.

    Anyways, thanks for the advice, I wasn't sure if somehow long exposure to the cold would do something the the fermentation of the beer. I wanted to save it til either Christmas or New Years, and hoping to keep the flavor profile that it had when fresh.
