Aging over a Florida summer

    Hey all,

    I've begun to rack up a pretty serious cellar for a college kid, but I won't be living in my Florida apartment over the summer, and I doubt we're going to leave the A/C on over that three month period. I have all the beers under my bathroom sink (pathetic, I know, but it's the darkest, coolest place I could find with the least temperature change). My apartment can get pretty hot. It's 80 right now with the A/C off and it's only February. Temps can get pretty high over the summer. Anyway, the beers are mostly stouts, and other darker, High ABVs. This is not a question about aging IPAs. My plan for most of the brews in there is to crack one every six months and see how they develop. Is there a huge problem with this arrangement?

    Who turns off their AC in Florida for three months!?! Occupied or otherwise the humidity alone is a bitch. If your beers fit under the bathroom sink I would suggest putting them in the fridge on a low setting. You won't have any food in there and once the fridge gets cool and no one is opening the door several times a day it won't use up much power at all.

    I left some Storm King in my garage for 2 years. I live around San Antonio and it gets to 107 during the summer, so the garage must have gotten pretty hot. Anyway, the bottles were in a cooler with nasty water in it, but I decided to open one. It as amazing!

    How about I come stay the summer in Florida at your apartment and watch over the beer? 80 in Feb..... Oh, the humanity! :wink:

    1st thought - your refrigerator is presumbaly going to be pretty empty if you're vacating your apartment for the summer. Put your beer in there and turn up the temp a bit.

    2nd thought - when you get back, buy a cheap apartment-size refrigerator, keep it at a somewhat higher temp setting, and "cellar' your beer in there.

    3rd thought - when you get back, instead buy an inexpensive wine refrigerator which stores its contents at a cellar-like temp, and keep your beer in that.

    4th thought - DON'T leave you beer in a hot apartment all summer. Please. :slight_frown:

    It won't necessarily ruin all your beer, but it's a high risk move to leave it all in that kind of heat.

    I'd spend the money on a small wine fridge and stuff them in there, or keep them in the main fridge as mentioned. For the money we spend on beer, a couple hundred bucks on a good cooler is not a bad deal.
