Aging Parabola?

    Hiya, BAers! I got super-lucky this weekend and came into two bottles of 2015 Parabola. Of course, the question becomes: Do I drink these fresh in the coming weeks, or age one bottle for a year or more? I’ve heard Parabola doesn’t age terribly well. Anyone have experience/insight on this? Suggestions?

    I think the consensus for a beer like that is drink one fresh and age one for a year or so for a comparison.

    What you hear won't necessarily jive with what your tongue tastes. Only you can determine what you'd prefer.

    I would recommend drinking one fresh, and then re-visiting the other one 6-12 months later. Then you'll know when you drink your future Parabolas. :slight_smile:

    Had a 2011 a few weeks ago and I mus say it has aged well.

    I think it ages really well. Keep all Firestone vintage beers on a 2 year rotation. Drank a 2013 parabola this weekend and it was delightful.

    Thanks, all! I was leaning toward giving one bottle a year or so, but figured I'd see how others experienced it first, especially given how cashy the bottles were.

    It is a personal taste preference more than anything.

    I am in the same boat - haven't had Parabola before but scored a few, and I am planning to wait a month or two for the first one (I find bourbon barrel beers can be hot super fresh), then wait at least a year.

    I have heard from others that it is similar to Bourbon County, and I prefer my BCBS with a few years on it - the 2012 BCBS is about perfect for me right now, so it is a very personal taste thing. If you have had BCBS or similar stouts aged, then that can help guide you and provide a benchmark when you drink the first one.

    Much appreciate it, man. I’ve only recently been building up my cellar and stashing beers away for a significant amount of time, so I’m still learning in the ins and outs of this process.

    If celleared at a consistent 40-45 degrees, it should hold up very well and develop for at least 5 years. I had 2011 this year and it was beyond phenomenal.

    Had a vertical of '11-'14 Parabola and the older versions were amazing.

    I feel like it slumps a bit at one year out, but then comes around by year two, so if you are going to drink one and age one, give the second one a decent amount of time. Ive done fresh vs 1 year vs 2 year a couple of times, and it has been 2, then fresh, then 1 in order of best to worst each time.
