Aging St. Bernardus (not Abt 12)

    Hello all!

    I recently acquired some "old" St. Bernardus Wit, Pater 6, and Tripel. They all have dates on the back, but the Tripel and Pater 6 clearly state "Best before end." The Wit does not. The dates are:
    Wit: 18-11-10
    Tripel: 03-12-12 (Best before)
    Pater 6: 05-11-12 (Best before)

    I've heard of people aging the Abt 12, but what about these?

    I may be wrong, but don't these have active yeast in them allowing for cellar aging?

    I'm having a Wit right now and it's still delicious. No tannin-iness or sourness at all.

    What's the deal?

    Tripel and Pater will probably be very good. I think (with many people disagreeing) that some belgians with 5-6% ABV smells a bit like yoghurt or sour milk. But tastes really good. The tripel on the other hand often develops amazing smells with honey and yeast. I never had a old Wit. But try it. It will not make you sick.

    They'll be fine, if cellared OK. I have had these or are their likes in the cellar for a year or two beyond, and they were still good, although I'm not sure the (or a) wit gained a lot.
