Aging Stone IRS and GI Lolita.

    I'm asking about these beers because they seem to be really good canditates for cellaring, plus I can get them fairly easily right now. I really enjoyed them fresh, but I was wondering what some age would do to them (6 months to maybe a year. Unfortunately I don't have a lot of patience lol). I would be storing them in the fridge. I don't have a cellar or a basement and the pantry would get too hot in the summer, so the fridge (everday normal fridge, not a beer fridge or anything) seems like the ideal spot. Anyways, thank you for all your time.

    Stone IRS ages really welll, and for the price is a great candidate for putting multiples away every year. I've got about 4 cases of mixed vintages going back to 2007 in the cellar.

    I have 1 Lolita in the cellar from last year, but haven't opened it yet, so nothing for you on that one.

    Storing them in the fridge is going to slow down any "aging" that would be done in a cellar and it's very easy to just drink them when they are in front of you on a daily basis.

    If you can convert a small freezer to be your long-term "cellar", that may be an option for you.
