I recently bought a 4pk of Weyerbacher's Insanity. Stuck it in the fridge, as I planned to have one for the next couple of nights whilst watching reruns of Dr. Who. When I tasted, I got a couple of surprises. The first surprise was a wonderful, rich, creamy, bourbony, woody, nutty, brown sugary, aroma, and a similar taste up front. The second surprise was a pretty horrible taste of alcohol, almost like rubbing alcohol, in the back and lingering in the aftertaste. To the point where I very much did not enjoy it.

So I have a couple of questions for people who are much more knowledgeable about beer than I.

    1) Would aging this beer help to decrease the "booziness" and allow the flavors to meld better?

    2) If so, would taking them out of the fridge (thus allowing them to warm back up) damage the beer?

If any of you have any suggestions, they would be very much appreciated!

    1) Generally, but nothing is for sure.
    2) No

The Insanity that I've cellared in the past held up well for the 2ish years (until I'd drank them all) and yes, in my experience they became much smoother and less boozey as they aged.
To your other question- sarcastro is absolutely correct. Taking them out of the fridge will not damage the beer in any way.
Be patient and I suspect you'll love the results. Cheers!

I want to add something, but ThickNStout and sarcastro basically covered it.

Try your next bottle fairly soon at cool room temperature. Let it warm to about cellar temp before starting.

The first bottle I had warmed up to room temperature as I was drinking it, and it was still pretty wretched. But yeah, I was planning on trying one in 3-4 months, and then another at the end of the year.
