Am I heading the right direction?

    So far I have just started cellaring beer last week. I have my beers in a dark, relatively cold corner of the basement inside of a cooler. I put 2 DFH Palo Santo Marron, 3 NC Old Rasputin RIS, and 2 Flying Dog Gonzo Imp Porter in the cooler.

    My question is: Are the three beers that I am cellaring worth putting away for a year or two? Or should they be enjoyed fresh? I enjoy all three fresh, but find the heat from the Palo to be a bit rough. Any suggestions? I feel like the Palo and Old Rasputin belong there, but haven't heard much about aging Gonzo...

    They will all hold up fine. And none of them are rare so you can buy more if you want to drink them fresh. Not much risk at all. You are on the right path. I had a 2009 Chimay Red the other night that was just exquisite. Got a lot more out of it than the fresher version. The dark fruits were more pronounced. Figgy goodness.

    All 3 will age well. Not sure if you need the cooler if the basement corner is both dark and cool. Think along the lines of imperial stouts, barleywines, old ales, belgian strong ales, quads, lambics and some imperial porters. Good start. Good luck...it's addictive, but rewarding

    All three will age just fine. The Palo Santo actually ages really well. I've heard nothing but good things from bottles that were 1-4 years old. I still have a couple from 2008 that I've hung on to. The last one from 2008 that I drank was probably in early 2011 and it was great!
