Another Saison Critique Please.- Partial mash

    2 row Pilsner- 20%
    White Wheat- 14%
    Caramunich- 5%
    Flaked Oats- 5%

    Mash at 148 for 60 min.

    Extra Light DME- 45%
    Honey- (5min)- 10%

    Sorachi Ace- FWH- 22ibus
    Fuggles- 30 min- 6ibus
    Fuggles- 15 min- 7ibus

    1.5 tsp- seeds of paradise crushed- 5 min

    Wyeast- French Saison.

    OG- 1.062
    FG- 1.008

    is that yeast 3711? It might go lower than 1.008.

    What temperature are you going to ferment at?

    other than this, I'll leave the analysis to more experienced saison brewers.

    Yes 3711- I don't know on fermentation temp- I've heard go high like mid 70's to 80s for saisons?

    I also have Nelson Hops- and was thinking of subbing those for the fuggles? OR a dry hop with them??

    I have exactly one experience with this yeast. At 64-66F it went to 1.006 FG. That's all I know :rolling_eyes:

    Dry hop with the Nelson. While I've never used it before, I've had great luck with citra as a dry hop. I've never tasted fuggles with Nelson DH combo. I've only ever fermented with 3711 in the low 60s. I've always wanted subdued and balanced phenolics, but others have went into 70s to there liking. But Drewbarge had some great data on 3711 at different temp points that correlated with my experiences IIRC.
